Country Olive Bread

Ingredients- Makes 2 loaves
3 1/2 cups all-purpose flour divided
1 teaspoon sugar 1 large egg
1 teaspoon salt 1/2 cup chopped kalamata olives
1envelope quick-rising 2 teaspoons minced garlic (3cloves)
yeast (.25ounce) 1/4 cup grated Parmesan cheese
1cup water
3 tablespoons olive oil divided
1 Grease a baking sheet, Combine 1 cup flour, sugar, salt and
yeast in a large bowl; mix well. Heat water and 2 tablespoons olive
oil in a small saucepan over medium heat until warm, 120-130
degrees. Add water mixture and egg to flour until a soft dough forms
and pulls away from the sides of bowl.
2 Place dough on a lightly floured surface. Knead any remaining
flour, olives and garlic into dough until ingredients are well
distributed and the dough is smooth and elastic, 4-5 mins. Divide
dough in half. Shape each half into an 8in round. Place on
prepared baking sheet. Cover dough loosely. Let rise in warm
place until almost double in size, about 30 minutes.
3 Preheat oven to 400degrees F. Brush dough with remaining oil
and sprinkle with Parmesan. Bake breads until golden, 25 minutes.
Whole-Wheat Pita Breads
Prep Time 30Minutes
Bake Time
5-6 Minutes
Ingredients- Makes 5 pita breads
1 1/12 cups whole-wheat flour
1/2 cup all-purpose flour
2 1/2 teaspoons quick-rising yeast
1 teaspoon sugar
1cup warm water (120-130 degrees)
1 tablespoon vegetable oil
1 Combine whole-wheat flour, all-purpose flour, yeast, sugar and salt in a food processor;
running, processing until dough forms into a ball. Process 1 minute longer to knead dough.
2 Place dough on a lightly floured surface. Coat a sheet of plastic wrap with cooking spray and place sprayed side down
over dough. Let dough rest 15-20 minutes.
3 Place baking sheets
on bottom rack in oven.
Preheat oven to
500degrees. Divide
dough into 5 pieces.
Shape each piece into a
ball. Roll out each
dough ball on a lightly
floured surface to a 6 to
7 inch round diameter.
4Remove baking sheets from oven. Place dough rounds on heated baking
sheets. Return baking sheets to bottom rack in oven. Bake pitas until
puffed and lightly browned around edges, 5 - 6 min Serve warm or cool.
